Cheese and Chorizo Puffs

Ingredients:


  • 1/2 pkg (450 g) frozen all-butter puff pastry, thawed
  • 3/4 cup (175 mL) finely cut chorizo sausage
  • 1/2 cup (125 mL) chopped Asiago or Monterey jack cheese
  • 1 egg
  • 1 tsp (5 mL) gentle paprika


Instructions:

On floured surface, unroll pastry. victimization 3-inch (8 cm) spherical cutter, cut out sixteen rounds, gathering and rerolling scraps as necessary.

In bowl, combine chorizo with cheese; place scant one tbsp (15 mL) in centre of every spherical. gently brush edges with water; fold pastry over to make halfmoon shapes. Pinch edges to seal. Place on parchment paper-lined rimmed baking sheet. (Make-ahead: Freeze on baking sheet till firm. Layer between waxed paper in airtight instrumentality and freeze for up to one month.)

In tiny bowl, whisk along egg, two tsp (10 mL) water and paprika; brush over ace of puffs. Bake in centre of 450°F (230°C) kitchen appliance till puffed and golden, ten to twelve minutes.
